January is officially heath and wellness month. EVERYONE I know is doing some kind of diet, challenge, or cleanse – including myself. Well maybe not including myself, I’ve broken my cleanse several times already! Since being healthy is all the rage right now, I thought I’d share my favorite green smoothie recipe with you. I make these in large batches so I can just grab one in the morning on my way out the door.
- 1 bag of spinach
- 1 cucumber, medium chop
- 3 celery stalks, medium chop
- 1 pear, quartered and seeds removed
- 1/4 bunch of cilantro
- 3 carrots, medium chop
- juice of 1/2 lemon
- 2 cups coconut water, you could use regular water but then your smoothie wouldn’t be trendy and cool
I start off by placing the coconut water and spinach in my Vita-Mix and blending at medium speed. Then, with the circular piece removed from the lid, I add the rest of the ingredients in one-by-one. Once everything is in, I turn the blender on high for a few minutes. This recipe makes just over four servings. I typically drink one right away and store the rest in mason jars (they’ll keep for three days max). Also, drinking from a mason jar is just the cool thing to do.
